8th and final stop of our Sanuki udon research and observation tour where we visited 8 udon shops in less than 24 hours. By this point, fatigue was setting in, our palates were overloaded with dashi and wheat, and every detail started mattering even more. Oudon Setobare still managed to stand out. Probably one of the most relaxing udon experiences I had during the trip. The moment you walk in, there’s soft jazz playing in the background that gives the whole place a calm, intimate atmosphere. It felt more like a thoughtfully curated café than a typical fast paced noodle shop. You can immediately tell they take pride in their craft. Watching the staff hand rolling and preparing the dough in full view of the dining room was one of the highlights. The kitchen and FOH were spotless, organized, and quietly efficient. Every movement from the team felt intentional without looking robotic or overly rehearsed. The ordering process was smooth and quick, but still welcoming. Staff handled guests efficiently while keeping the atmosphere relaxed. Small details like their apparel and branding also stood out. Everything looked clean, modern, and cohesive without trying too hard. The udon itself leaned into simplicity and execution. Beautiful sheen on the noodles, excellent texture, and a clean flavor profile that really let the wheat and dashi speak for themselves. Nothing overly heavy or gimmicky. Just well made udon with confidence. After 8 shops in under a day, this was a memorable place to end on because it reminded me that great udon doesn’t always need to be loud or excessive.
