You sit in one of the five tables and place your order with one of the Bangladeshi waiters, who are so fluent in Arabic that it appears they could hardly speak their mother tongue.
The options are limited - Koshary or Pasta - Vegetarian or Non-vegetation.
Koshary is the national dish of Egypt, a simple recipe of Macaroni, Rice, Chick Peas, whole lentils, Vermicelli with a topping of Tomato sauce and fried onions. The chef pulls up all ingredients from the respective bowls in a small steel bowl and hands over the assistant who pours over the sauce.
While the dish is getting ready, you are served with a small cup of steaming hot clear soup accompanied by some oily croutons.
On the table are two big bottles, one contains garlic sauce and the other a dark red chilli sauce. Both are liquid in consistency. You mix up the Koshary with sauces of your preference and delve into the heavenly world of Pharaohs.
Comfort food is always stimulating and Koshary is no exception. Every bite is heavenly and a small bowl with all accompaniments is only QAR 5. A truly democratic dish.
I have tasted Koshary in different places, but if anyone can suggest a better place than Shatta, I will stand corrected.
Consistency is the key to their success. I have fallen in love with Egypt only because of Shatta.
