Shimazu 島津 is a sushi restaurant located in Shirakanedai that is famous for its exceptionally delicious cuisine, and it is also a restaurant that is extremely difficult to make reservations. Luckily, my mom’s friend is a regular customer here and coincidentally she also made a reservation for tonight, so she invited my mom and I to eat together. My mom and I are so lucky to be able to experience the most difficult restaurants to make reservations in Tokyo without making a reservation. Each piece of sushi is carefully prepared and the order of the plates is arranged perfectly, making me feel like I have just read a touching short story. The ingredients are fresh and extremely delicious, the vinegar in the rice enhances the flavor of the ingredients. The variety of nigiri dishes they have researched is amazing. Both my mother and I enjoyed the sweet Kitayori scallops bought directly from the farm, Daisuke’s soy–marinated eggs with a salmon roe flavor, and the early summer tuna with a crispy layer of fat. Of all the sushi I’ve had, this is definitely the restaurant that takes the top spot. I was impressed from start to finish. From the sardines, yellowfin tuna to horse mackerel, everything was delicious. Not only the food but also the hospitality is great. This is one of the best restaurants that I can think of when I want to go to a good sushi place. The chef and owner Mr. Yukichika is meticulous to every little detail. This was observed in the way he prepared the food and how everything was neatly arranged before serving to the guests.
