We had a mixed but overall enjoyable dinner at Signatures, with some genuinely excellent highlights. The cocktails were outstanding — easily 5/5. We tried both the vodka and tequila-based cocktails and found them beautifully balanced with excellent finishes. The apricot liqueur in the Soleil was particularly exceptional and made it one of the most memorable drinks of the evening. The beef carpaccio was good, although it felt incomplete without bread, crostini, or another vehicle to accompany it. Unfortunately, the crab cakes were the biggest disappointment. The texture was extremely soft and the aroma was quite strong; they reminded me more of crab balls than a traditional crab cake, and I wasn’t able to eat them. The chilled roasted red pepper soup, however, was excellent. The roasted/fire-kissed flavours worked beautifully with the heirloom cherry tomatoes and radish and made for a thoughtful, well-balanced dish. For the mains, the fish and chips was the star of the evening. The fish was fresh, flavourful and neither heavy nor greasy, and the tartar sauce was a perfect complement. The chips themselves were less successful; the frites served with my strip loin would have been a much better pairing. My strip loin was nicely prepared but could have used more seasoning. The whipped béarnaise was lovely, although I actually found myself imagining how wonderful it would be alongside a seared scallop and tiger shrimp. The arugula Caesar salads were somewhat lacklustre for us. I’m admittedly not an anchovy lover, but some homemade toasted sourdough croutons would have added much-needed texture and made the salad considerably more interesting. For dessert, the crème brûlée was good, but strangely the crème brûlée itself became secondary to the accompanying cake and white-chocolate disc. I would have preferred to see the brûlée remain the star. The sorbet was lovely and, in fact, would have been wonderful served between courses as a palate cleanser. Finally, our server was excellent — enthusiastic, attentive and knowledgeable. I was particularly impressed by how switched-on she was regarding wine freshness. That level of attention absolutely elevated the evening. There are clearly some very talented people in the kitchen and behind the bar. With a little refinement to a few dishes, the experience could be exceptional. Food: 3 Service: 5 Atmosphere: 3 Order type: Dine in Meal type: Dinner Price per person: $100+

It is first time to come to signature restaurant foe supper. The atmosphere in the restaurant is relaxing and wonderful. The food there is extremely amazing and impressed to me. My brother and I had a great time and we will definitely come visit again. At the end of the supper, we got two macaron, they were gorgeous and not too sweet. The macaron gave the supper which is five courses a perfect ending. It is my pleasure to have a such amazing supper in Signatures restaurant.
