Had a really nice dinner here though I was a bit disappointed at one point of the meal. The rabbit shaped monaka they served me and my friend was soft / probably days old or not stored properly. It was definitely not crispy at all. I asked the wait staff/sommelier if it was supposed to be this way (it was my polite way of giving feedback that something is off.) He thought for a while and then said he was not sure, sometimes maybe the weather affects the crispiness. Then he added that it was a guess, and walked away. As a fine dining restaurant I expect better service recovery. There was none. No offer for a replacement, no apologies, no nothing. Also the tea pairing I had was tasteless most of the time or just tasted sweet without any depth and flavours of the tea being used/showcased. I love tea pairings but this was really bad. A very cozy and welcoming restaurant. The sommelier was warm and professional, and his English was surprisingly fluent. The staff were all really friendly. The food and desserts were delicious. Food: 4 Service: 5 Atmosphere: 4

Sincere has quickly become one of my favorite destinations for French cuisine in Tokyo. An ideal choice for a 女子会, the course featured 15 beautifully prepared dishes, 14 of which could be enjoyed as many times as we wished. Each plate was exquisite — so much so that we found ourselves wishing for a third round. Just as we anticipated dessert, we were delighted by the unexpected arrival of the main dish: a perfectly crafted meat pie that was surprisingly light on the palate. The finale — a delicate matcha soufflé with lemon peel vanilla ice cream, accompanied by their house blend coffee — provided a flawless conclusion to an unforgettable dining experience.
