I met Soeta when I started visiting the city of Vitória. Something like 9/10 years ago. There were two or three visits this time, surprising for the haute cuisine offered by the couple Bárbara Verzola and Pablo Pavón outside the Rio-SP axis. The explanation came from the CVs of the two chefs who met in the kitchen of the mythical Catalan elBulli by chef Ferran Adriá. At the time, Soeta's cuisine featured a lot of the experimentation and molecular gastronomy style created by Adriá. And Soeta's cuisine at the time did not disappoint at all for those who came to the restaurant thinking about trying the food made by a couple who were there: in the kitchen of what was considered the best restaurant in the world for years and years. Soeta's tasting menu many years ago even featured a version of elBulli's famous liquid olive sphere. But far beyond that, there were sequences of innovative dishes, with surprising techniques using and deconstructing elements of Espírito Santo gastronomy. We returned to Soeta today and it is sad to realize that that restaurant and its innovative cuisine are left behind. But far behind. Today's Soeta has the same couple in charge of the restaurant. But otherwise it's just a regular restaurant, with "international" food like several others in the capital of Espirito Santo. The innovative spirit and dishes with surprising culinary techniques were replaced by the basics: normal pasta, risotto, grilled meats, salads... correct food from a 3-star hotel restaurant. We ordered the tasting menu, still thinking that a restaurant that offers a tasting menu aims to give an overview of the style of the house. It was disappointing even without trying to compare it to the Soeta from years ago. Sad and uncreative fish paste sandwich. An octopus risotto where the octopus was ok and correct but the risotto was tasteless and salty. Grilled fish with sad potato puree. To end the sequence, a chorizo ​​steak a little beyond the cooking point with inedible peach palm leaves and a salad reminiscent of those in pre-washed supermarket packets. The salad wasn't even seasoned. In the middle of this dull parade a small light, a fish belly sushi that was a distant glimpse of lost creativity. And that was it. Yes. It's a monumental distance from what the initial Soeta was. In fact, you can't even say it's haute cuisine. Just food for those who are hungry and don't expect anything much. We looked at the tables next to us and saw spaguetti carbonara, steak medallions with risotto... food from a hotel restaurant. No creativity, no innovation, just food for those who are hungry. But the chef couple is still there running the house. For me, this is hope. Something happened for sure and I'm not here to judge the decision to stop with the bold menu and do the basics. But we hope and hope that they innovate again. May they once again use the experience and techniques that enchanted us so much years ago. May Soeta one day return to being one of the best restaurants in Brazil and not just a place to eat a basic risotto. Price per person: R$200+ Food: 2 Service: 3 Atmosphere: 1
