Chef Ito’s latest vision at Sozou is a welcome evolution of the craft I admire about him — he continues to combine sleek technique with deep respect for Japanese tradition, and here it’s elevated by the sculptural design, the robata and sushi‐bar interplay, and that sense of calm precision.
