Dear Camca, we feel it is necessary to correct your claims with technical and objective facts. We are not a snack bar. We are a fully fledged Italian restaurant offering express high quality cuisine.All our pasta is HOMEMADE fresh every day and, as an enthusiast of Italian cuisine, you should know that fresh egg pasta has radically different cooking times compared to industrial dried pasta: -our Fresh pasta cookes in just 1-2 minutes due to the porosity of the dough and the presence of the eggs. -Industrial pasta requires 9 to 12 minutes to rehydrate. Therefore the speed of our service is scientific proof of the product’s freshness, not of poor quality. We perfectly understand that the authentic textures and aromas of artisanal pasta can be disconcerting to those accustomed to not artisanal products. While personal preference is beyond debate, confusing handmade craftsmanship with a preparation flaw is a technical error we felt necessary to clarify. Regarding the €0,50 service charge per person, as you asked what it was, it had already been explained by our staff, and we remained you that this cost is clearly stated on the very first page of our menu, in full compliance with transparency. We would also like to point out that we always serve our pasta accompanied by Parmesan cheese and breadsticks. It is disappointing that your declared gastronomic experience fidi not allow you to recognize either the technical basics of homemade fresh pasta or the true nature of our restaurant We would like to clarify that while personal taste is one thing, questioning our work which is loved by hundreds of people daily, is a completely different matter.
