Sparky's Burgers, BBQ & Espresso is one of those unforgettable roadside stops that feels equal parts restaurant, museum, and weekend hangout. Located in the famous chile capital of the world, this quirky spot has built a reputation around its legendary green chile burger—and it absolutely lives up to the hype. The burger is juicy, perfectly grilled, and piled high with Hatch green chile that delivers the ideal balance of smoky heat and flavor. One bite makes it clear why so many people make the drive just to try it. The BBQ is also excellent, and pairing it with one of their espresso drinks makes for a surprisingly great combo. The atmosphere is just as memorable as the food. Outside and inside you’ll find an eclectic collection of vintage figures and statues, including characters like Ronald McDonald, dinosaurs, and even aliens watching over the parking lot. Inside, the walls are covered with old posters and hand-painted metal gasoline station signs that give the place a funky retro vibe. On weekends the place really comes alive. Car clubs, motorcycle groups, and road-trippers roll in, filling the lot and creating a lively social scene. Add in live music events and a rack of fun T-shirts for sale, and it’s easy to see why Sparky’s is a must-visit destination in Hatch Meal type: Lunch Food: 5 Service: 5 Atmosphere: 5

We used to love Sparkys. We drove up from Las Cruces yesterday with my son, who lives in Phoenix, . We couldn't wait to have the grilled chicken sandwich. We hadn't been to Sparkys in about a year so we were really excited about this. First of all no corn - that is a bummer. No straws!? And our green chile grilled chicken sandwiches were sooo disappointing. They were on Texas toast, very little chile, didn't have the delicious seasoning , and they were tough. Soooooo disappointed. Oh and the honey mustard served with them, something new that you can keep. My son enjoyed his pork burger and fries, good thing you have bottles of ketchup because that sauce served with them was strange. Very disappointed, won't make the special trip again any time soon.
