Spildegarden, run by Jane and Geir Henning, is a unique place that combines a rich family tradition with a modern approach to silk production. The family business, which is now in its fourth generation, is distinguished by genuine passion and deep knowledge of the craft. When we recently visited Spildegarden to taste sides, it was an unforgettable experience. The 1.5 hour talk about the apple varieties, the cider making process and the history of the farm was fascinating and full of valuable information, enabling us to understand and appreciate the effort that goes into each and every bottle of cider. Tasting the three types of cider was a culinary discovery. Each individual cider had a unique taste and character, reflecting the different apple varieties used and the care that went into production. What impressed me the most was the distinct difference between the various sides and their complex flavor profiles. Another highlight was the starter - a cheese and cured meat board that went perfectly with the cider. The cheeses, which were carefully selected, accentuated the flavors in the drinks, and the bacon was the perfect tasty complement to the whole tasting. All in all, a visit to Spildegarden is not only an opportunity to taste excellent sides, but also a unique opportunity to learn more about this sophisticated drink. Jane and Geir Henning run their farm with great passion and dedication, making Spildegarden a unique place to visit and highly recommended to anyone who loves sides and local traditions.
