Me pasó de todo en mis dos visitas.
Se agradece la buena carta de cervezas.
Sobre las pizzas, son hechas con harina 100% italiana (importada directamente) y el chef de Génova se luce con su técnica en las masas.

Las combinaciones se ven y escuchan increíbles. Hay con mechada, otras con entraña, unas de salmón con alcaparras y ricotta, prieta... De todo!!

Con la "Tuscolana" ($9.900 con entraña, cebolla al carmenere y ají verde), tuve sentimientos encontrados. NADA con esos ingredientes puede ser malo, pero admito que no fue lo mejor del mundo. La cebolla estaba demasiada dulce, así que se robaba el resto de los sabores, y el ají verde eran solo unas tiras largas, por lo que no estaba en toda la pizza y cuando te tocaba, te tocaba harto de una.

La otra, la "Mazzini", estaba mejor. Queso de cabra, jamón serrano y tomate deshidratado en buenas proporciones. Bien.

No me ha tocado mucho ambiente, pero sé que lleva poco tiempo.
En resumen... Hay fe. Volveré, esperando que vaya agarrando ritmo. Se agradece la técnica en la base, faltaría afinar las cantidades y estamos.

Espectacular,sin duda la mejor pizza, las pastas extraordinarias la simpatía y buena mano de su chef genovés, y el tiramisú simplemente delicioso,  merecen consolidarse y ganarse un espacio entre los mejores de Vitacura y los precios muy razonables.
