I had a pure matcha with just hot water, no sugar or milk. It still had a natural sweetness, which was pleasantly surprising. I really enjoyed the drink. Meal type: Other Price per person: $1–20 Food: 5 Service: 5 Atmosphere: 3

Stitch Coffee is a specialty coffee roaster and café at the new Sydney Fish Market, Pyrmont, Sydney. Stitch had been on our radar well before the Sydney Fish Market visit; it was a deliberate stop on our itinerary and one we had genuinely looked forward to. The location is well chosen, the design is considered and the overall offer reflects everything Stitch stands for as a brand. The setting within the new SFM is a real asset and the vibe fits the space beautifully. The Food: The bakery selection was underwhelming on the morning we visited, which was a surprise given the Stitch reputation. We arrived early, before the crowds, and expected the cabinet to be at its best. It was not quite there. For a brand that clearly sweats the details at every touchpoint, this is worth addressing. The Experience: The coffee came through warm rather than hot, and the team appeared stretched; understandable in an early-days, high-footfall environment, but noticeable. Two things caught our attention as genuinely exciting concepts worth calling out. The coffee on tap is a well-executed idea; cold brew and batch filter served directly from tap lines signals real intent and suits the SFM crowd perfectly. Quick, consistent and a clever addition to the groovy market environment. The retail offer is equally impressive; Stitch has used the space to showcase its full range of beans, brewing equipment and accessories in a way that educates as much as it sells. For any coffee enthusiast, it is worth slowing down and spending time with it. Both concepts demonstrate that Stitch is thinking well beyond the standard café model. Other Note: We are sharing this as fellow hospitality operators who genuinely want this to succeed. We visited early in the post-opening timeline and appreciate that teething periods are real. None of this has put us off. The bones are excellent and the concept is strong. Temperature consistency and bakery quality are the two things to dial in, and when they do, this will be a standout stop within the market. Review: Recommended by Team Chic from Chic Retreats NZ. Stitch Coffee at SFM has all the ingredients to be a destination in its own right. We are rooting for it and will be back to see it firing on all cylinders. Food: 3 Service: 4 Atmosphere: 5
