I had a great time at Sultan’s Lab Night in Madison! It was really fun getting to try some of their more experimental dishes and see what they come up with. Everything was unique and flavorful, but the garlic naan was definitely my favorite! Such a fun experience, and I’d definitely recommend checking out Lab Night if you get the chance! Price per person: $40–50 Food: 5 Service: 5 Atmosphere: 5 Vegetarian offerings: Large vegetarian selection Vegetarian options: They start by asking about dietary restrictions and are super accomodating!

Booked expecting a Punjabi-Pakistani restaurant; the menu’s “deconstructive, decolonizing” framing should have been a clue this was something else. A steep cancellation fee locked our party of 8 in, so we went with open minds. The tandoori naan was genuinely great — char, flavor, worth the price, though some pieces were over-charred. It was also the only dish that felt Punjabi at all. Everything else missed: shakshuka tasted like canned tomato sauce with spices dumped in, eggs overcooked into rubber. Ratatouille biryani was chopped vegetables and undercooked rice — not ratatouille, not biryani. Cholay paneer read as canned chickpeas, oddly seasoned. Tandoori wings were comically huge, half-cooked, and bland. Rasmalai was dense and dry rather than soft and milky; shahi tukray fared better. The owner said he “could see we’re South Asian.” Ambitious kitchen, real skill in the bread — but branding this as Punjabi, let alone decolonizing, oversells it.

Hi Asad, Thanks for giving us a shot and for the thoughtful review. We wanted to respond and make sure we clarify a few things for others who may be reading. Our "steep cancellation fee" is a discretionary charge of $20 per person for large parties cancelling within 48 hours on busy evenings. As a party of 8, that's 20% of our small restaurant's seating. Surely you can understand how losing that much business on short notice is detrimental to a small business like ours, which is why we instituted the cancellation policy. To be clear, Decolonize is our elevated tasting menu, which is a separate experience from the a la carte menu which you ordered. Our owner did not comment on you being South Asian unprompted. The head of your party began speaking to him in Urdu/Hindi, and indicated you were all from Karachi. In fact, he even asked our owner if he spoke Punjabi. At that point, our owner made sure to tell you that our food is not very traditional in an effort to set the right expectations for your experience. We do deconstruct the cuisine and take elements from other cuisines of the world. None of the ingredients in our menu are canned. They are all fresh and prepared as such. A traditional ratatouille is in fact chopped/cubed vegetables cooked in a rich tomato sauce. We do it in the traditional rustic French style so it suits the biryani rice preparation. Our wings are sourced from humane free range Wisconsin farms. They are whole chicken wings from healthy non-factory farmed chickens. So they're not "comically huge" but rather how large they should be when proper farming practices are employed. They were fully cooked in our tandoor oven. Important to note is that your party finished nearly everything that was ordered, including the wings, and did not complain about the food at the time. We understand it can be difficult when expectations don't align with what happens. However, we did our best to make it clear to you what we're all about, but your review indicates that it didn't come across. We don't share your essentialist view of Pakistani or Punjabi cuisine. Nevertheless, we thank you for giving us a shot, and hope you'll return to try us again some time.
