It's the birthday of the Queen, so I don't dare to wait too late, put my young daughter down, eat sushi, and prop up the table legs. I chose two 13-piece sushi sets and sat in front of the bar to eat while watching the chef show off his skills. The appetizer salad is fresh and crisp, and the chawanmushi is hot and spicy. Followed straight into the middle, the Ehime Mandarin Sea Bream, the mouth is full of citrus aroma, very refreshing. Add lime juice to the scallops, making the meat soft and tender. The left-mouthed fish is served on the side with spicy radish paste, which is refreshing and delicious. Deep-sea pond fish contain enough oil to make teeth strong and elastic. The red scallop meat is thick, crispy and very fresh. Hokkaido cuttlefish has been moxibustioned with fire. It has a slightly burnt aroma and is delicious to eat. Barracuda is paired with ground sesame seeds and fire moxibustion, making it full of aroma. Hokkaido Makdan shrimp melts in your mouth, plus vinegar rice with shrimp paste, a double enjoyment. Hokkaido sea urchin has firm and sweet meat with no fishy smell. Toluo is full of fat, completely gluten-free, and melts in your mouth. Tuna fish in soy sauce, the meat is tender and has a distinct flavor. Fresh mackerel, accompanied by perilla and white kelp, has firm meat and a very fragrant taste. The right side of the fish skirt is moxibustioned with incense to force out the oil and make the meat soft. Toluorong hand rolls, rich in taste. Finally, there is peach sorbet to smooth out the sluggishness and finish perfectly.

Now, they had this awesome discounted evening set menu, so we were in! We made a reservation just in case, and boy, we were glad. Walking in, it was obvious this place was a big deal – it was buzzing with happy diners. After checking out the menu, we went for the 2-person sushi set meal. First up, a garden veggie salad and some Japanese steamed egg. The salad was super fresh and just the right balance of tangy and sweet. The steamed egg? Oh man, it was warm and silky - yum! Next, the scallops. Big, fresh chunks with a hint of lime for a zingy twist. The deep-sea bream was so tender, we were left wanting more. The red clams were a flavor explosion – fresh, sweet, and with a firm texture. The squid, thin and lightly seared, was a perfect blend of tender and crispy – subtly delicious. The sardine had a stronger fish flavor, but it was still fresh, even after grilling. And can you believe they served us fresh silver fish? Not something you see every day. Grilling just made it richer, and no fishy aftertaste at all. The sea urchin was a real treat from the sea – perfectly chilled and intact. Wrapped in seaweed, it had a nice crunch without being too much. The fatty tuna? Oh, it was heavenly and literally melted in our mouths. Seriously, if you go, you've gotta try it! The soy-marinated tuna was a savory, salty delight with a vibrant red hue that was totally Instagram-worthy. The hand roll, loaded with minced tuna, finely chopped scallions, and shredded carrots, was a soft and chewy burst of fresh tuna goodness. A friend recommended Sushi Rin's home-cooked sushi set, which is almost worth it. 13 pieces of sushi are priced at $508, and they also come with homemade plum wine. It's very cost-effective. On weekdays, the place is full and I want to book a seat. Chawanmushi The vegetables are fresh and crisp, including shredded onions and cherries, plus black vinegar sauce, sour and sweet to wake up the stomach.
