Roberto Susta himself is often present, and he is an incredibly warm, charismatic, and colorful personality — beyond being a true culinary genius. From the moment you walk in, the atmosphere feels personal and VIP. He sometimes takes orders himself and engages with guests in a way that makes the experience feel special and memorable, not just a meal. The pizzas at Sustable are simply outstanding. Perfectly crafted dough, top-quality ingredients, and flavors that are both deep and beautifully balanced. But what truly makes this place unforgettable is the gluten-free pizza. Even for people who don’t usually eat gluten-free, this is something completely unreal. There is no difference in taste at all compared to regular pizza — and in some ways, it’s even better. The texture is perfect, the flavor is rich, and it genuinely feels like one of the best pizzas overall, not just “for gluten-free.” It’s hard to believe you’re not eating a classic Neapolitan dough. Beyond the pizzas, everything else we tried at Sustable was excellent, but the highlight was definitely the overall dining experience.
