My wife and I had dinner at TOSAGE in Azabu and thoroughly enjoyed the entire experience. From the moment we arrived, the atmosphere was intimate and elegant, and the staff struck exactly the right balance - warm, attentive, knowledgeable, and professional without ever making the evening feel overly formal. The tasting menu was excellent from beginning to end. We particularly enjoyed the progression through the antipasto and risotto to the beautifully cooked charcoal-grilled aged Yamagata beef fillet. The pasta course was a real highlight. We tried nearly the entire selection, including the fermented butter and truffle tagliolini, botan shrimp with karasumi peperoncino, fresh sea urchin, chilled hairy-crab pasta, simple tomato sauce, and Yamagata beef Bolognese. It was a wonderful way to experience several different flavors and preparations over the course of the meal. We also enjoyed some lovely wine with dinner, which complemented the food beautifully. The yogurt gelato provided a light, refreshing transition before TOSAGE’s tiramisu finished the evening on a wonderful note. What stood out most was how well everything came together: excellent ingredients and cooking, a lovely ambiance, and genuinely gracious service. It felt sophisticated but relaxed - the kind of restaurant where you can settle in, enjoy each course, and simply have a wonderful evening together. TOSAGE gave my wife and me a memorable night in Tokyo, and we would happily return. Quite a nice menu. Generous black truffle spread over all stages of the course menu. Unfortunately a somewhat stressful evening, with staff making sure our course / sitting is done before the next sitting starts. To be fair, we started about 25 minutes late due to having to find the somewhat 'secluded' location. Simple solution: keep a 30 minute gap before sittings, instead of making customers feel uncomfortable that they need to wrap up because "the next customer is waiting". I've shared this point of view to owner chef Ryo Tosaka. Hopefully he agrees.
