Each dish has gone through dozens of tastings — this is not a “desert outpost”, but a fortress of flavour. Chef Biso Chechenov, President of the North Caucasus Culinary Association, personally oversees the supplies: halal meat comes from Karachay‑Cherkessia, dairy products from the foothills of Elbrus, and the “endorphin” vegetables from Adygea. We have no pre‑prepared ingredients: our cuisine is “straight from the knife” — fast, fresh, no compromises.
