What stands out here is simplicity: letting quality ingredients and authentic flavours speak for themselves. They've posted where they sourced their (very short list of) ingredients outside the restaurant. The owners are clearly dedicated to their craft. Every time I've been here the noodles are handpulled and perfectly chewy. The broth is both mellow yet flavourful at the same time. Teuchi Asama serves my favourite shoyu ramen in Tokyo.
