Beer may not be associated w/ terroir the way wine is, but we believe that where we’re from impacts how our beers taste. This dry-hopped California Pale Ale represents the bold yet approachable spirit that embodies our state.

DBA (Double Barrel Ale)2012 great american beer festival gold medal (english/special bitter) Our patented Firestone Union uniquely incorporates 60-gallon American oak barrels into the fermentation process that yields beers of extraordinary character & complexity. This system improves the fullness of the palate, balances hop character & lends a clean briskness to the finish. The influence of the toasted oak also imparts unique hints of smokiness & vanilla, as well as a subtle fruitiness to the flavor profile. REMEMBER: Watch for bottled on dates located on the necks or bottom left corner of the label for each of our beers. Our beer is not pasteurized, so it is best when stored at 44F or below, out of light & within 120 days of the bottled on date...this ensures freshness & ultimately a great Firestone Walker beer!

Fourteen (No Longer Available)Anniversary ale, since founding our brewery in 1996, we have specialized in the rare art of fermenting beer in oak barrels. In the fall of 2006, we released a limited edition, oak-aged strong ale called “10” to commemorate our 10th anniversary, thus beginning an annual autumn rite. this year, we present 14, our fifth release from our barrel aged program. 14 was crafted from separate lots produced over several months & years, then carefully blended into this truly unique & complex brew.

Fifteen (no longer available)Anniversary ale, as a finished beer, XV is alive w/ amazing complexity & yet it is quite possibly the most integrated & seamless blend yet. Looking at a blend of 8 beers on paper at first looks chaotic & potentially disjointed; however, a closer look reveals & interesting theme: 76% Barley Wine style beers, 19% Stout & 5% Imperial IPA. XV introduces our new blonde barley wine Helldorado w/ flavors of lavender honey liqueur. The well established DDBA delivers its signature American toasted oak, English caramel toffee & light leather nuances. 2010 vintage Sticky Monkey folds in brown sugar, maple, cinnamon, ginger & ripe figs. Parabola brings the familiar flavors of roasted dark coco, & chocolate covered cherries. Velvet Merkin carries silky milk chocolate, toasted coconut & creamy textures. Good Foot & Bravo add assertive barley wine warmth & lush barrel derived vanilla bean notes. The game changer this year is the addition of Double Jack to the blend. At just 5% its massive dry hop character brings citrus zest, tangerine & mango aromas making this a completely new beer. the beer is unfiltered & unfined, so there will be a small amount of sediment in the bottom of the bottle. XV is best enjoyed poured carefully into a half-filled brandy snifter or wine glass. Allow it to warm to 55F to fully enjoy the pleasing & complex aromas. As the beer sits & breathes in the glass, a richer, orange zested, chocolate dusted, vanilla custard character is reveled, so take your time. If you wait to open your bottle later, store it in a cool dark place. I suspect that this beer will age well & change favorably for years to come. It was an absolute pleasure in the making & I truly hope you enjoy our Sixth oak-aged blend! Our journey continues & it’s just as fun & exciting now as it was back in 1996.

Skunk Works
-
HelldoradoThis is an Imperial Blonde Ale or Blonde Barley Wine. It has the lightest color of the beers in our program but really carries a lot of interesting barrel character: vanilla, light char & amazing lavender honey notes. There is a rich boozy honey liqueur character & loads of smooth sweet toasted malt. The El Dorado hops dance in the back ground & do not play a dominant role in the flavor profile. This beer gets better & better the longer it is in barrel. Very limited draft availability.
-
Stickee MonkeeThis brew sits firmly in the English Barley Wine class. We have a lot of lean & hot beers in our barrel program, so we formulated a beer to sit on the sweeter & malty side so that we could utilize it as a blending piece. We used brown sugar from Mexico that has wonderful molasses flavors that are reminiscent of Belgian candi sugar. It has a full body & lush texture. There is barrel expression all over this beer: toasted oak, coconut, leather & cigar tobacco. This is a beer that we will brew again for future blends. Draft only, extremely limited.
-
Velvet MerkinThis is our Velvet Merlin Oatmeal Stout aged in Bourbon Barrels & it just won the 2010 & 2011 Gold medal at the GABF for barrel aged beers!!! This beer goes into the barrels as a roasty dark chocolate, coffee accented mild mannered stout & comes out transformed as a milk chocolate, smooth dark cherry, vanilla & coconut infused masterpiece. We are incredibly proud of this beer & it seems as though it was always meant to be a barrel aged brew. 100% Oak Barrel Aged Very limited draft availability.
-
Good FootGood Foot created as the hoppy sidekick to Sticky Monkey. It was designed w/ a massive hop charge in the kettle in hopes that we would have a more hop accented blending piece. We have learned over the years that barrels have a way of mellowing all things & bitterness very often lost in the aging process. What was a hop bomb has mellowed into a balanced & complex barley wine. After it warms, the hops start peeking through. Very limited draft release.
-
BravoBravo is the very first beer that we brewed for the barrel aging program & is a beer that we have brewed every year since. We originally named it after an experimental variety of hops that we were interested in trying. We now brew the beer w/ US grown Fuggles which are earthy & resinous. It is a lean simple barley wine brewed to show case barrel flavors. This batch has massive bourbon barrel notes that morph as the beer warms in the glass. Draft only, extremely limited.
805

805It’s not a unique idea, but one that everyone on the Central Coast understands… Call something “805” & it means local. As a regional craft brewer we have always known that the closer the beer is to where it was brewed, the fresher it is. In fact since 1996 our brewery has been built on fresh, local beers for the Central Coast…. so we created a beer just for our locals in the “805”.
