The Japanese love this word “base”. At least, I’ve noticed this since living there from 2022. It’s such an apt descriptor though for many things—efficient terminology. Soup and stock bases, sauce, dough, etc. It’s makes for an easy understanding of something unique such as this cool, clean and cozy ramen shop in the outer burbs of Tokyo. Specialising in chicken and fish soup bases, I wandered upon this spot craving noodles without the intensity of a classic Tonkotsu broth or the moisture sapping qualities of a miso one. TOKUBETSU (特別) literally means special, and there are a few things that make the offerings at this place just that. The chicken tsukemen (dipping noodles) comes with a ledge of lemon and a yuzu foam. Super crazy; think a crème fraiche but airy-er. Mixing it in with the noodles and a squeeze of lemon either over the top or stirred into the broth lifts the entire dish into a balance I never associated with ramen. Think a roast chicken with lemon pepper seasoning. Someone in Sydney might crack the code and charge half a week’s rent for it. Get it good at this local sleeper.
