If you're in Taipei and craving authentic Japanese ramen, 特濃屋 (Tokunoya) is a must-visit spot! The portions are generous, and the flavors are rich and aromatic. Whether you like it spicy or mild, they’ve got you covered. You can even ask the staff to adjust the saltiness if you prefer a lighter taste, which is perfect for those who usually go for milder flavors. The chashu (pork) here is my absolute favorite among Taipei’s ramen shops—so tender and flavorful. The restaurant itself is cozy with plenty of seating, which is rare for ramen joints. The friendly staff, including the owner who speaks Japanese, adds to the authentic atmosphere. The signature Yokohama Iekei ramen is a must-try, especially the DX version with its rich tonkotsu-shoyu broth, seaweed, chashu, and a perfectly soft-boiled egg. Prices are a bit on the high side, but the quality justifies it. Just a heads up: the ramen here is a different style from the Yokohama Iekei chain found elsewhere in Taipei, so don’t confuse the two.
