Back in 2023, I had suppon and fugu dinners three nights in a row — each at a different restaurant. Every experience was amazing in its own way. On the third night, I tried hire-zake (grilled fugu fin sake) for the first time, and also had suppon heart and gallbladder with sake — another first. Both were unforgettable. The balance of flavor, technique, and care was outstanding. If you’re open to trying traditional Japanese delicacies, I highly recommend experiencing a full suppon or fugu course at least once. I’ll definitely be back again when I have the chance. Food: 5
