特製軍鶏そば - 醤油 / tokusei shamo soba - shoyu 麺庭つむぎ / mentei tsumugi / minami-rinkan, kanagawa ️ 06/28/2024 (@wei.oframen on ig for my ramen adventure ) Had this shop bookmarked for ranking quite high in the newcomer section of the TRY magazine. Both their shoyu and shio are very popular and they also offer whether you want the base broth to be Shamo chicken or niboshi. I opted for the Shoyu Shamo combination because it was the bowl I saw the most on social media. With many high-ranking shops using Nagoya Cochin, a delicious Shamo option like this bowl at Tsumugi is not as common. I love the flat noodles used here in this bowl. They were also hand-kneaded before heading for the boiling water. Furthermore, the chashu toppings were divine. They provided two variations of the chashu in the tokusei bowl but my favorite was the peppered pork chashu. It was honestly the star of the show.
