I would hope a great pizza place would not purposely use old pizza dough. Just got a pizza last night from Twin Trees Cicero and it was horrible. The person making the pizza had to know the dough was old and if they didn't know before making the pizza they had to see it after it was made. The dough never rose and so the pizza was so flat the paper plate we were eating off as thicker than the pizza. I'm usually a huge fan of TT pizza but not going to order from there for a while.
