Ending a romantic weekend on the eastern shore, my wife and I stopped at Two if by Sea in search of something to fill our stomachs for the long drive home. Not only did we find welcoming service and delicious food, but we found an authentic slice of what makes small town America so beautiful. Entering the café, you are greeted with a wave of warmth from the kitchen, the staff swarming around diners to fill coffees and clean tables, and the mass of bodies laughing through their breakfast with friends, family, and random encounters with strangers embodying the friendliness of the eastern shore. The old wooden counters are stocked with all the tools of breakfast, silverware ready to be claimed, salt, pepper, hot sauce, and any number of additions that one might wish to make to their coffee. Shelves filled with knick-knacks, old-world curios, and an invitation for wandering eyes to discover something that catches their attention while you wait for service. It seems that timing is everything. For a building with an unassuming silhouette, the entryway tells a story of quality and popularity as diners congregate and threaten to bust open the door with their rumbling stomachs. For this reason, it took a few moments to receive service at our table because of some confusion among the staff as to which direction they needed to run first. Fortunately, we were in no rush - as it seems so few people are on Tilghman Island - so we were content to sit back and 'people watch'. Besides, when we had ordered our food, it was presented to us almost moments later. I had ordered the 'Good Morning' plate, which came with eggs, home fries, and a choice of meat. My wife ordered a BLT with tater tots. It was curious to see the chef engage with 'down home' cooking in a serious and considered manner. For a style of cooking that is so often correlated with slapdash carelessness and a little bit of whatever you have available, it was clear to see that Two if by Sea took pride and care in the food that they present, even in a plate as simple as eggs and potatoes. Perhaps unnoticed and underappreciated by the slew of casual diners, I would wager that this care and consideration of flavor is one of several undercover factors that brings such crowds to the café - though undeniably demands well-deserved attention through the cooking classes provided by the chef throughout the year. Overall, the reasonable prices, delicious food, friendliness of the staff, and the invitation to step back into a period of this country that makes you forget about social media and Monday morning meetings were all powerful hooks that made the thought of Two if by Sea linger in my mind throughout the drive home and across the days after. I couldn't recommend this place enough for a chance to unplug, feel levelled with those around you, strip away artifice and pretentiousness of our daily lives and just enjoy some simple eggs and potatoes.
