Every preparation highlighted a different texture, flavor profile, and technique — from delicately cured cuts to rich charcoal-grilled selections and beautifully balanced seasonal dishes. Each course felt intentional and refined without ever becoming pretentious. The attention to detail was extraordinary. The presentation, the pacing of the meal, the interaction with the chef, and the overall hospitality created an experience that felt personal and memorable rather than commercial. The menu hits you with 10 mind-blowing styles of melt-in-your-mouth sashimi, leading up to the main event: a painstakingly crafted, 24-hour prepared grilled salmon that is pure umami perfection. But the absolute best part of the night is the incredibly gracious host who welcomes you like family and makes the entire experience completely unforgettable. Hands down the best and most exquisite dinner and meal we had in 3 weeks in Japan, by far. Recommended by the chef, we got the omakase dinner and it was nothing short of spectacular. The restaurant is beautifully decorated, and we were sat at the bar in front of the chefs. Both speak perfect English and explained to us every dish and any culinary questions we had (I had several as I love cooking). They're great hosts aside from great chefs. Now, the food was delicious. One after another we were served dishes which kept surprising us with flavors, from subtle to bold, a feast for the senses. All of it paired with great sake. If (more like when) we're back to Japan I'd love to repeat it. I honestly never knew salmon could have so many different flavors. All in all, a wonderful night to remember. Thank you chefs!
