Right Eda @ Nakagawa Ward, Nagoya City The appearance of an old private house is reminiscent of a Kyoto townhouse. A long-established store that has been in business for 48 years. 22 years instead of the current shopkeeper. Last year, the restaurant name was changed from "Sushi Kappo Ei" to "Ueda". Although it is located far from the downtown area, it is a hidden famous restaurant that is frequented by food connoisseurs who travel around the country. The vinegared rice is made with red vinegar, which is firm and unravels exceptionally well. I like the saltiness to be soft and the vinegar to be slightly stronger. There is no fluctuation in the temperature of the vinegared rice. Compared to other stores, the number of knobs is small and the focus is on hand grips. If you look at the splendor of cutting and preparing the material, you can understand the owner's technique without saying a word. However, this cozy feeling is probably due to the comfortable way of dealing with the general and the proprietress... It was delicious. It was a feast!
