There are two types of lo mein: yakisoba style and soup style, both of which are correct. The regulation is "steamed noodles, cabbage, and mutton" and the rest is each restaurant's original. The "Ushio" lo mein I had was yakisoba style, with sauce flavor. The mutton with garlic and sesame oil flavor was a bit peculiar, but that is exactly what it tasted like... unforgettable! That is the reason why it is my No. 1 gourmet dish that I remember. Mutton and cabbage are stir-fried in a wok, and the steamed noodles, which are unique to Ina and have a firm texture, are combined with the spicy aroma of the mutton and cabbage. The harmony of the sauce that fills the restaurant with a spicy aroma...! Lo mein is a local delicacy that has been nurtured and loved by the local people. It is simple and easy to prepare, and doesn't require many ingredients. But that's the beauty of it, isn't it? It is a feeling of being able to visit the daily lives of the local people through food.
