Low rating not because it tasted bad, but because it is not Taiwan food. I am from Taiwan, and the sausage is in the wrong color nor does it have flavor of 高粱liquor and I’m not sure what spice they put in the seasoning but it tastes extremely off. The 涼拌乾絲 is all in small bits when it is supposed to be in long, unbroken strands. The 牛肉麵 is wrong as well. Flavor is too light, the color is wrong, and the beef is not correct. It’s also my first time seeing cilantro on 牛肉麵。 If you want to say this is Japanese take / fusion of Taiwanese flavors, sure I’ll give it a higher rating. But due to its claim of being true, 本格台灣料理，1 star. Service was immaculate, of course. Food: 1 Service: 5 Atmosphere: 3

ご来店ありがとうございます。 この度はご期待に沿えず、残念な思いをさせてしまい申し訳ございません。 腸詰につきましては、台湾在住中に学んだ製法をもとに、着色料を使用せず手作りしております。 そのため、屋台や市販品のような鮮やかな色味とは異なります。 また、高粱酒をはじめとする調味料は台湾から買い付けたものを使用しております。 涼拌乾絲や牛肉麺につきましても、当店のスタイルとして、お酒に合うよう味付けや仕立てにアレンジを加えてご提供しております。 当店は「お酒に合う台湾料理を楽しんでいただくBAR」として営業しており、一般的にイメージされる台湾料理とは異なると感じられる部分もあったかと思います。 いただいたご意見は真摯に受け止め、今後の参考にさせていただきます。
