We arrive with high expectations but leave disappointed. Let's start with the amuse-bouch: the very good Parmesan and lemon potato cream as well as the small spoonful ravioli. The rest left us indifferent. We ordered five courses and dessert. All the starters were disappointing, both the traditional one (a very normal veal with tuna sauce) and the creative plant-based ones (Jerusalem Jerusalem artichoke, cauliflower). The very simple mushroom risotto, where the only addition, dill, in our opinion unbalanced the dish by covering the scent of undergrowth. The fillet is not up to the standard of a starred dish as are the rest of the dishes. The desserts were not a worthy conclusion to the meal as we found them too sugary. I visited Trattoria Zappatori in Pinerolo for my birthday, an experience that managed to blend tradition and innovation in an intimate and refined environment. The restaurant, led by chef Christian Milone, offers a culinary experience that goes beyond a simple meal, transforming into a real sensorial experience. The restaurant, located inside a suggestive structure that combines rustic and modern elements, creates a welcoming and refined atmosphere. The interiors are well cared for, with frescoed ceilings and elegant furnishings that perfectly complement the gastronomic offer. Dinner began with a series of refined appetizers served in a specific order, designed to offer a crescendo of flavors. Among these, I particularly appreciated the spinach and cheese sponges, which despite being small in size, were able to offer a complete taste experience, preparing me perfectly for the rest of the evening. Subsequently choosing the market tasting menu, the first course was the Fassona steak accompanied by a Béarnaise sauce with steak fat, of excellent quality with a perfect balance between the delicacy of the raw materials and the creativity in the presentation. Every bite was an explosion of flavours. We then moved on to a plate of fusilli with cheese and pepper enriched with red prawns and candied lemon. However, I found the combination of flavors a little forced. Although the ingredients were of high quality and well prepared, the whole did not completely convince me, leaving me with the feeling that they were trying to amaze more than to create a harmony of flavours. Unfortunately, I wasn't able to take a photo of the dessert, as it was so delicious that it disappeared in an instant! The dessert was a harmony of floral flavors, with delicate notes of violet and rose that combined perfectly with flambéed apple spheres. Completing the dish was a soft vanilla sponge and creamy ice cream that made every bite a true sensory experience. A sweet ending that crowned the evening in a sublime way. The service was impeccable, with attentive and discreet staff, always ready to explain the dishes and recommend the best pairing with the wines from the cellar, which offers an excellent selection of local and international labels. In conclusion, Trattoria Zappatori is an ideal destination for those seeking a sophisticated and out of the ordinary gastronomic experience. Despite a small note on the second course, the entire meal was memorable and made my birthday a truly special event.
