If you are looking for a unique experience in the heart of Rome, AEDE is the right place! Small but welcoming place, with an intimate and well-kept atmosphere. The service was excellent thanks to the waiter who handled each table with professionalism and dedication (all tables served by himself). The tasting menu is an 8-course journey that surprises, although it may differ slightly from what you see online. Each dish has a unique story to tell. For the wine, I relied on the staff's advice, and it was a perfect choice with a Vergnes Crémant Rosé Brut that enhanced each course. Here are some of the dishes that impressed us: The initial trio of finger food is delicious, with the potato croquettes with pecorino cheese standing out. The "fake anchovy bone" with mayonnaise is a small masterpiece. The scallop with pumpkin cream and 'nduja crumble was perhaps the best dish of the evening. The saffron and pear risotto has a delicate taste, even if slightly unrelated to the service. Amberjack with fermented daikon leaves and shiso is another interesting dish, although the daikon has a crunchy texture that stands out. The beef with celeriac and aubergine cream has an intense flavour, perfect for those who love strong flavours. Bortolotti's ravioli with seasonal vegetables and miso are a pleasant reinterpretation and the pasta is cooked just right. The trout with cucumbers and dashi is tasty and also creative in its presentation. The pre-dessert, a goat's milk pannacotta with cherries and wild herbs, is perhaps the only course that didn't impress as well as the others (perhaps avoidable?). To finish, the dessert is a refreshing ice cream that closes this experience in style. The bill? 210 euros for a culinary journey worth every penny. AEDE offers a distinctive experience, with some details to be perfected, but which leaves a positive memory. Must try!
