7 course set menu - best book in advance as only two tables (of up to 4 settings each) per evening. Dishes are well thought through with some surprising delights and obviously takes much time in consideration, preparation and presentation beforehand. The wine pairing is reasonable and recommended (one of which was a white Fendan/Valais) from Switzerland where the chef has worked). Having recently been to a Michelin 2 star in Tokyo, I would say that Credo is getting there albeit the portions really are far too small for me personally (I was full at the 2 star but not here) but still a 5 star for Yamagata. Very pleased that there was no heavy use of pretentious presentation (sauces etc splayed around the plate which is more form over substance and annoying to have to chase). The meal will take about 3.5 hours and is very relaxed with no music.
