Dining at EST, a one-Michelin-starred restaurant, is a refined and carefully choreographed experience, led by Chef Guillaume Bracaval. One of the more engaging moments of the evening came when Chef Bracaval personally approached the table to prepare the fish course, a thoughtful gesture that added a sense of intimacy and craftsmanship to the meal. The restaurant excels in consideration and service. Dietary restrictions were handled with genuine care: no alcohol, no pork, and a commendable flexibility in adapting the experience, including the creation of well-balanced mocktails, a detail often overlooked in fine dining, yet handled seamlessly here. The beef steak stood out as the strongest dish of the night, well-executed, and enjoyable. Unfortunately, the remainder of the menu did not reach the same standard. The starters lacked depth and distinction, the desserts were underwhelming, and even the bread — a simple sourdough — felt entirely ordinary. A special thank-you to Max, our table attendant, whose warmth, attentiveness, and professionalism elevated the experience. While EST delivers the polish and service expected of a Michelin-starred establishment, the overall journey falls short of leaving a lasting impression. Overall rating: 3/10.
