Best étouffée in Abbeville restaurants, summer 2024

Étouffée is a French word meaning "strangled", "suffocated". As we see in the photo, the shrimps are really strangled with a combination of vegetables and tomatoes in a thick brown sauce.

Brown sauce and tomatoes are traditional ingredients. The dish can be partially cooked in advance, making the sauce, but not adding shrimp.
