A very cozy little restaurant with amazing food, very kind staff, and a well-thought sake pairing. The food comes in an omakase style, at least for dinner, and was legitimately some of the best food I've had in Japan. I think the new-onion (新玉葱) with tofu sauce may be my favorite dish I've had so far. They also had a very nice sake pairing, with an option for more or less sake (more is a full serving every course, 2 with the large course). The owner has over 20 years of experience in sake and even wrote a book on in that you can flip through. They have a lot of really cool books to browse while you are there. The waitress (also manager) was very kind and knowledgeable, I would recommend going here for her alone. I would recommend an intermediate level of Japanese for best experience. This is such a cute spot!!! Really unique pre fixe dinner that’s all vegan and beautifully presented. The staff are very friendly and love to tell you about their sake collection (over 50 bottles!!!). The owner even wrote a guide to sake that’s super cute!! The server went above and beyond by allowing us to take the rest of our meal to go when we had to leave early. If you’re vegan and love sake you need to come here!! We ate at Polyphony our second-to-last night in Japan and it was one of the very best meals we had during our three week visit. The restaurant is small but thoughtfully arranged and decorated, with an emphasis on cat imagery (which I loved). The fixed tasting menu was adventurous, admirably well-considered, and thoroughly delicious, from the opening Jerusalem artichoke soup through the petal mushroom, grilled cauliflower, and grilled asparagus courses, mugwort tempura, and finally a delicious sandwich cookie filled with yuzu & bean paste. The 8 courses were expertly paired with a range of sakes and wines, and my wife enjoyed a similarly delicious pairing of exceptionally creative non-alcoholic drinks. The server and chef were wonderful people: as friendly as they were creative and knowledgeable. Everything about this meal was special. I give it my highest recommendation with this caveat: get a reservation - you'll be glad you did.
