Ramen Edoichi(江戸壱) in Shinbashi will have its pre-opening in November. This is a Japanese-style ramen that focuses on the Dashi(seafood broth), and you can choose from three types: dried sardines, dried fish, and shellfish broth. This time I went for the traditional dried fish broth, the soup made with several types of dried fish is clear and the aroma is appetizing. The toppings are simple chushu, bamboo shoots, and spring onions. The noodles are thin and go well with the light broth, and have a chewy texture and flavor, and are surprisingly filling. A bowl of ramen that allows you to enjoy the broth to the last drop is a rare treat in Shinbashi, where there are many hearty dishes, and it may also be good for a bowl after drinking. You can change the flavor by adding porcini and Chinese pepper oil halfway through, so you can enjoy it in a variety of ways, such as adding porcini for an Italian flavor and adding Chinese pepper for a Tantan Chinese noodle flavor.
