Ratatouille ingredients
Ratatouille is a traditional peasant dish from France, popularized by the Pixar animated film “Ratatouille”. Many people are unaware that there is a Spanish ratatouille as well called “Pisto Manchego”. It is a classic vegetable dish served with fried eggs and made with simple ingredients, but is packed with flavours. One of the most iconic places to try this dish in Madrid is Huerta De Carabana. The owner and chef, Roberto Cabrera, believes that food is to be sourced organically and the uniqueness of this establishment is food grown on their farm. So, try your hand at this simple yet elegant dish in the comfort of your home with our recipe.
Step 1. In a deep saucepan, heat the olive oil on medium heat and add the chopped onion and garlic. Cook for 10 minutes, till the onion and garlic are fully coated in oil, and mix every 2-3 minutes till the onions are translucent.
Step 2. Next, add the chopped bell pepper and cook the mixture for another 10 minutes, till the bell peppers are tender. Then add the cut zucchini to the mixture and cook for about 5 minutes more till every vegetable is soft.
Step 3. Finally, add the chopped or blended tomatoes to the mixture and season generously with sea salt, black pepper, and a dash of granulated sugar. Mix and add the bay leaf.
Step 4. Cook the mixture for 10-15 minutes and mix it every 2-3 minutes. Once the tomato sauce has thickened, remove the mixture from the heat and transfer it to a serving dish.
Step 5. Take a large frying pan and heat enough oil for deep frying. Add one cracked egg to the hot oil, once it reaches a temperature of 325 degrees Fahrenheit. Cook for about 2-3 minutes. Remove the egg and serve.
Tip: Garnish with basil leaves and serve the dish with the fried egg and ratatouille.
