  • 450 grams of raw peanuts
  • 250 grams of granulated sugar
  • butter or oil for greasing
  • 1 cup of all-purpose flour
  • ½ teaspoon of salt
  • 1 ½ cup of water
  • a few stems of cilantro
  • 3 scoops of ice cream (for example, Malai Mango & Cream)
  • Malai Carrot Halwa
  • Malai Lychee Sorbet (for vegan option)

Step 1. In a flat, medium pan, roast the raw peanuts for about ten minutes, until golden, and let them cool. To make the brittle, dissolve the sugar on medium low heat, stirring it constantly for five minutes. Once the sugar is completely melted and has a light brown color, add the peanuts, and mix well until combined. Then, evenly grease a small baking tin to prevent the brittle from sticking. Pour the peanut-sugar mixture into the tin, quickly roll it out to about 8 mm thick. Leave the brittle to harden.

Step 2. Move on to the crepes. In a separate bowl, mix the flour and salt. Add the warm water to make a thin batter. Grease a flat pan and heat it on medium flame. Pour about 1/3 cup of the batter to the pan and spread it evenly by swirling it around the whole surface. Fry until the crepe is done and the edges are curled up. Remove from the pan and let it completely cool down.

Step 3. To make peanut brittle shavings, scrape the brittle block with a sharp tool, or smash it with a spoon or fork. Alternatively, you can use a blender to turn it into peanut dust.
