We had watched video about this restaurant before. We came here at 4p.m., we waited in line for fifteen minutes. We couldn't read Japanese. There are many gyoza shops in Kobe, and Akaman is one of the most famous and has a long history. The feature here is that you can customize the miso sauce to your liking. You can watch the gyoza being made in the kitchen. The wrapping method was unusual, like a 3-step fold. It seemed like the part-time workers weren't used to it, so some customers forgot to put out water, and others forgot to take out plates and chopsticks. Only gyoza is on the menu.
