Dear Tharun, On a first note, I shall thank you for taking the time to share such a detailed account of your evening with us. I'm delighted to read that the evening, on the whole, left such a strong impression. The wine pairing, the experimental dishes, and the bar upstairs are just some of the manhy details in which we pour real care, and so much of ourselves; hence, it means a great deal to learn they came through. I'll be sure to pass along your kind words to our sommelier and hostess, who I know will be touched to be remembered so fondly, even ten months later. I insist on addressing, directly and honestly, the moment that clearly stayed with you. I'm, genuinely, sorry that any part of your evening left you with that feeling - no guest should *ever* leave our restaurant wondering whether they were seen differently than the person beside them. I want you to know this does *not* reflect who we are as human-beings and a team, nor how we operate. We are, quite literally, a house of many origins: every single one of us - myself included - comes from different countries, different backgrounds, different corners of the world. It is part of what makes this place feel the way it does, and it's not something we take lightly. I can't undo the feeling that evening left you with, and I won't pretend to know exactly what passed between you and those staff members. What I can tell you, with complete sincerity, is that it does not, in any way or at any level, represent our values, and I'm, nevertheless, genuinely grateful you decided to address it, as it was already discussed internally and with absolute maximum seriousness. In case there might be something else you would rather share personally, note I would be fully available to hear you. I do hope you'll give us the chance to welcome you back one day.
