Been wanting to go since they opened and they did NOT disappoint. This used to be a different restaurant and the food and service never lived up to the location. Cimera absolutely SHINES. It’s the best view in Denver and the mountains match the name in Spanish which means the summit or highest part of a mountain. As a vegetarian, I always worry I won’t find many options but was delightfully surprised. Our server briefly explained each dish as it came out and we all shared different plates. I had a cocktail but my friends had beers. We’ll have to try their happy hour if we can ever make it there before 5pm. There were a few folks that sat on the balcony but it’s still a bit chilly this spring. I did notice they had blankets to match the Pan Latin vibes! Park in the garage so you don’t rush this meal. It’s worth being savored. They also have some additional seating for small groups and meetings at an affordable price. Will be back! We elected to go to Cimera rather than Safta for an early dinner abc regretted the choice, even with the $15 discount offered by the hotel for guests. We got 4 dishes (it's family style) so we got 3 small and one large. The chicken was undercooked in both chicken dishes. The only dish we liked were the tacos (see photo) The empanadas were OK. The chicken skewers and the main dish roasted chicken were practically raw from our perspective. I'm sure they would use a meat thermometer to be safe, but it must be barely safe. The food was OK. I ordered the half chicken which came with fries. The chicken was basic, slightly on the dry side. The French fries were definitely McDonald's style. The cocktails were delicious. Service was super slow. It was not busy at all when we arrived. The views were disappointing. It was mostly city views. We could not see any mountains but that could have been from the haze of wildfires. The atmosphere was nice in the restaurant.
