Celebrated a big milestone birthday here for my mom. The chef came over, introduced himself and made our group feel extremely warm and welcomed. The food was amazing, with a depth and quality that is unique. The plates came with interesting background knowledge about Mayan ingredients and ways of cooking. I am truly grateful to the team at República for making my mom's birthday extremely special and an experience we won't soon forget. Muchisimas Gracias.
