Overall, R&D is an impressive Chinese fusion restaurant that elevates traditional flavours without straying too far from the heritage and origins of the dishes as other Chinese fusion restaurants have. Crispy Squid: My favourite dish from the meal by far and a very perfect example of Chinese fusion that doesn’t overdo the “fusion” part. The spice and flavour of the typhoon shelter crumbs were true to the original version of the dish with crab. Tasting those flavours with the texture and taste of squid instead of crab were such a great mix of familiarity and novelty. Bonus points from someone who hated peeling shells of crab! Best Duck in the City: The duck has been regarded as the “must try” dish of R&D and needs to be reserved 24 hours in advance. The flavours of the duck felt very familiar but the skin of the duck was not crispy at all (and it was sliced in a way that was not able to capture the flavours of the skin). Pork & Crab Siu Mai: Similar to the duck, this dish contained familiar flavours of a traditional siu mai with crab meat (kind of like a pork and crab meatball) and a very delicate layer of skin. The siu mai was topped with a curry sauce which was surprisingly delicious. R&D Fried Rice: Not much to comment on here. Just a very solid fried rice dish. Food: 4 Service: 4 Atmosphere: 3 Price per person: $70–80
