Quality wise, the restaurant did not stinge. There was uni- – Awajishima uni – which was sweet enough, and the wagyu, omi beef, is one of Japan’s oldest wagyu brands and prized domestically. Apparently the flavour tends to be slightly beefier and less buttery than Kobe’s, so it is possible we are not used to this flavour and texture and found it to be not as tender as other wagyu beef we had tried. The main reason for the 3 star rating is the sauces, which we felt tend to be too salty or too rich, overwhelming the dish. The starter of salt-cured mullet roe with sticky rice was salty. The fish dish (Cutlassfish) tasted fishy, which is strange for a restaurant serving fine dining unless the fish is supposed to be naturally fishy? The highlight of the meal for me was the huge and very sweet strawberry and the home made ice cream which was creamy but not too sweet. The white asparagus was also sweet and very fresh. The chef was friendly and was chatting with the two Japanese guests who were there. Although he could not speak much English, he tried to interact with us as well. I had the most incredible experience at Ryosho. I booked a lunch reservation for Sunday, and when I showed up it turns out that I was going to be the only one there (they only do one lunch sitting). I was so surprised that they didn’t just cancel my reservation, not many places would open just for one customer. The food was incredible, the staff were very attentive, and the wine/sake pairings were on point. As an added bonus Chef Makoto was a delight to interact with. I would definitely come here again.
