Seta by Antonio Guida Four years ago, while travelling from Florence to Zurich, we stopped in Milan for a meal at Seta by Antonio Guida. That lunch left such a lasting impression that, four years later, we decided to return to Milan with two things very much in mind: another dinner at Seta and an evening at La Scala. When a single meal becomes a reason to return to a city, I suppose that says enough about how special a restaurant has become to you. And Seta did not disappoint. If anything, the experience this time was even more memorable than I had remembered. What fascinates me most about Antonio Guida’s cooking is that the flavours are rarely what you immediately expect from looking at the plate. There is always an element of surprise between what the eye anticipates and what the palate eventually discovers. The cooking seems to draw out and concentrate the very essence of each ingredient. Familiar ingredients reveal unexpected depth and intensity, with flavours unfolding gradually and in layers. Rather than simply combining excellent ingredients, each dish seems to explore just how much character can be extracted from them. It is difficult to describe merely as “delicious.” It is more an experience of discovering how profound and expressive an ingredient can become in the hands of an exceptional chef. A succession of unexpected flavours, yet never for the sake of surprise alone. There is precision, restraint and remarkable balance behind every plate. The service deserves equal praise. The staff observe each guest with great sensitivity—the pace of the meal, the mood at the table, even the smallest cues—and seem to know exactly when to approach and when to leave you simply to enjoy the moment. Attentive without being intrusive, polished without feeling overly formal. Elegant, thoughtful and genuinely excellent. Four years ago, Seta was a restaurant we visited while passing through Milan on our journey from Florence to Zurich. This time, Seta was one of the reasons we came to Milan. Together with La Scala, it was more than enough reason to make the journey. Returning to a place associated with a wonderful memory can sometimes be risky. Time has a habit of making good memories even better than they actually were. But not here. Four years later, Seta still surprises, still excites, and reminds me exactly why that first dinner remained so vivid in my memory. How could one not fall in love with this place?
