The food is wonderful. The way different flavors are brought together harmoniously for all the dishes was exquisite. There were combinations I never experienced before or thought of before. There were no misses for me. The service could be smoother. A little fine tuning would really bring it up a notch. This is one of the best Michelin 1-stars I've been to. Significant inconsistencies in service and environment for a Michelin-starred establishment I am sharing detailed feedback regarding my recent visit to T+T Taipei. Unfortunately, the experience fell noticeably short of the standards expected of a Michelin-starred restaurant, specifically concerning the dining environment, service responsiveness, and culinary execution. 1. Environment and Seating. The physical dining setup was highly problematic. My friend and I were assigned a table with such limited surface area that it could not comfortably accommodate two main courses and cutlery simultaneously. The layout felt cramped and ill-conceived. Furthermore, the seating was positioned in direct, harsh backlighting. We spent the majority of the meal with prolonged sunlight exposure, which made for an uncomfortable and distracting atmosphere. 2. Service and Communication Gaps. I raised these environmental concerns with the staff during the meal, but no practical solution was offered, nor did the on-duty manager attempt to provide an alternative arrangement. More disappointing was the lack of follow-up; I reached out via email and official channels post-visit to discuss these issues, but received no response. This lack of accountability and poor post-dining communication is unexpected at this price point. 3. Culinary Execution. The food did not meet the level of refinement associated with T+T’s reputation: • Balance: At least three dishes were overly heavy and lacked the nuanced flavor profiles one expects from high-end gastronomy. • Preparation: The lamb main course retained a strong, unrefined gamey odor, suggesting a lapse in ingredient sourcing or preparation. • Service Style: Dish introductions felt mechanical and perfunctory. The explanations were delivered in a scripted manner that lacked genuine insight into the ingredients or the culinary concept, making the interaction feel cold and unengaging. A Michelin star signifies excellence in both consistency and hospitality. This experience, characterized by a lack of guest care and technical flaws in the kitchen, suggests a decline in those core standards. I hope this feedback serves as a prompt for the management to realign their service and environment management with their prestigious positioning.
