The Chef: Awarded two stars in the Michelin guide, Chef Xavier Beaudiment continues to drive his culinary concepts forward using wild herbs and plants he harvests himself. He spent time in London working for Pascal Proyart before returning to France, where he began his own journey as a restaurateur, earning his first Michelin star in 2012 and then a second in 2017, after a significant renovation and expansion of his restaurant.

Located in the outskirts of Clermont-Ferrand, Le Pré is a gastronomic sanctuary nestled in the charming building along Route de La Baraque in Durtol. Its interior showcases an abundance of wooden decorative elements that create an atmosphere of warmth and tranquility. The restaurant features three tasting menus, crafted by Chef Xavier Beaudiment, whose dishes pay homage to the culinary roots of French cuisine while introducing daring and imaginative twists. Among the most intriguing delicacies are frog’s leg served in a savory sauce, trout paired with undergrowth, 'meat of the moment' with hazelnut gravy sauce, and cep mushroom elegantly draped in fur. In addition to the restaurant, Le Pré provides boutique accommodations replete with luxurious French hospitality. Positioned on the second floor, the hotel houses five large, brightly lit rooms, each adorned with wooden accouterments and meticulously chosen fabric colors including vivid blue and anise green.

Located near the major city square, it boasts a diverse menu that changes four times a year, featuring specialties made from fresh products purchased from farmers in regions such as Auvergne, South-West, and Provence. The interior of Auberge du Pont is split into two large rooms: the first is an elegant space in dark gray-brown color with an oak parquet floor and French ceiling and the second room exudes a modern, New York Loft-inspired atmosphere with brick and street art paintings, designer black tables, and cowhide patterned sets. I had no idea that Michelin was founded in Clermont-Ferrand and that it has so many Michelin-starred restaurants! However, I've found there are other Michelin-starred restaurants there. It would be great to have a complete list to explore all the dining options in the city.
