If you’re not in London or Turkey and have a craving for pide, you can make your own at home quite easily and enjoy this famous flatbread with your favourite filling. This cheese pide is perfect either for a good lunch or picnic. Pide (also known as Turkish pizza) is Turkish flatbread that comes in many forms, but usually in a cute boat shape. It’s packed with various delightful fillings neatly encased inside and, traditionally, baked in a stone oven. This dish is full of crunchy texture, warmth, and fresh flavours.

Ingredients

  • PIDE DOUGH: (makes 5)
  • 520g strong white flour
  • 6 g sachet dried yeast
  • 1 table spoon extra virgin olive oil
  • 1 tea spoon fine sea salt
  • 1 tea spoon fine sugar
  • 300 ml lukewarm water (preferably filtered)
  • FILLING:
  • 500g feta cheese
  • Parsley (small bunch roughly chopped)
  • Spring onions (small bunch chopped to your preference)
  • Fresh or Aleppo chilli
  • 2-3 table spoon extra virgin olive oil

Step 1. Pile flour onto a clean, dry surface. Make a well in the centre and add salt there.

Step 2. Dissolve the yeast and sugar in the warm water.

Step 3. Add water into the well and using a fork, slowly mix the flour with water. 

Step 4. When the dough becomes too hard to mix with your fork, flour your hands and begin to put it into a ball and knead for 10 mins.

Step 5. Grease a bowl and place the dough in. Cover the bowl with cling film and leave it in a warm place to prove for 45 minutes. The dough should double in size.

Step 6. Once the dough doubled, put it on the lightly floured surface and divide into several equal pieces.

Step 7. Make sure to preheat the oven to 240-250 C at least 30 mins prior to baking.

Step 8. Take a ball of the dough you divided previously, and place it onto a floured work surface. Roll the ball into an oval shape (40cmx17cm).

Step 9. Place the topping of your choice onto the rolled out dough and fold in the edges as shown on the picture above.

Step 10. Place the pide onto a baking sheet and bake for 9-10 mins.
