Chili Brokoli Salad
The word “Dishoom” is an Indian onomatopoeic word, which represents the sound you hear when you punch a villain in Bollywood movies. True to its name, Dishoom restaurant in London does pack a punch when it comes to flavour. It is an Indian restaurant paying homage to the Irani cafes and food of Bombay. Chef Naved Nasir staying true to London's ever-changing demands and lifestyle introduced a healthy salad recipe that is a flavour bomb. The Chili Broccoli Salad with toasted pistachios and shredded mint leaves, all dressed up in lime and chili dressing is one of the most delicious lunches or a welcome addition to your Sunday table. So do try this easy recipe and impress your guests at your next house party.
Step 1. Take a blender and add the lime juice, ginger, sugar, vinegar, and olive oil with a little sea salt and blitz the mixture till you have a homogenous mixture. Set aside this salad dressing for later.
Step 2. Crush the pistachios very lightly with a pester and mortar. Chop the red chilies finely and tear the coriander and mint leaves. Place the broccoli, chilies, pistachios, coriander, and mint in a large salad bowl.
Step 3. Pull the dates in half with your fingers, discard the seed, then slice each half into quarters and add to the salad mixture. Pour the lime and chili dressing into the mixture. Toss everything together and sprinkle the roasted pumpkin seeds on top. Squeeze a lime over the salad and use a wedge to garnish and serve with a protein of your choice.
Tip: Use wet fingers when dealing with the dates as water encourages the fruit not to stick.
