Christmas is synonymous with Roast Turkey and Glazed Ham on our dinner tables. There are hundreds of recipes and techniques for the perfect roast turkey and glazed ham, but when an award-winning chef suggests a recipe, you know it is worth trying. Derry’s Ian Orr’s "Browns Bonds Hill" is a Michelin-recommended fine dining restaurant that offers dining experiences throughout four seasons, such as wine dinners, private dining, and cooking demonstrations. It is renowned for its impeccable service and sumptuous food you can cook at home using chef Ian Orr’s recipe.

Cooking directions

Ingredients

  • 4kg “ready to cook” turkey
  • 125g of softened butter
  • 125g of toasted chopped walnuts
  • 10g of fresh chopped parsley
  • 10g of fresh chopped sage
  • 20ml of truffle oil
  • 3ltrs of water
  • 300g of salt
  • 50g of Sugar
  • Salt and pepper to season
  • 1 large ham (around 3-5kg)
  • 200g of local honey
  • 100g sugar
  • 50g tomato sauce
  • 2 tablespoons of cinnamon

Step 1. Bring to boil 3 liters of water with 300g salt and 50g sugar to make the brine liquid. Take it off the heat and add two cloves of garlic and five cloves once the brine mixture cools down. Keep the turkey overnight in the brine liquid.

Step 2. Preheat the oven to 220 degrees centigrade. Mix butter, toasted walnuts, parsley, and truffle oil in a blender. Remove the turkey from the brine liquid and rinse it with cold water, then dry it with kitchen towels. Rub the inside of the turkey with salt and pepper seasoning.

Step 3.  Run your fingers under the skin of the turkey breast and peel back as far as possible. Apply two-thirds of the truffle butter on the turkey breasts and pull back the skin to its original posting to cover the turkey breast.

Step 4. Place the turkey on a roasting tray and cover it with foil. Then place the turkey in the oven and cook it in the oven for 90 minutes at 180 degrees centigrade. After 90 minutes, remove the foil and spread the rest of the truffle butter over the turkey. Cook for another 30 minutes in the oven and baste it occasionally.

Step 5. Finally, remove the turkey from the oven and let it rest for 30 minutes before serving.

Step 6. Place the ham in a large pot of cold water and bring it to a boil. Then turn down the heat and cook for another 90 minutes. Once the ham is cool, remove the skin/rind and then score the fat.

Step 7. Mix the honey, sugar, tomato sauce, and cinnamon in a bowl to make the glaze.

Step 8. Next, place the ham on a baking tray and spread the glaze on it. Place the tray in the preheated oven at 190 degrees centigrade and cook for 40 minutes. Baste the ham at least four times while cooking to make it evenly glazed.

Step 9. After 40 minutes, remove the ham from the oven and rest it for 30 minutes before serving.
